Featuring in this pop up is the cuisine of North Kerala
- Malabar/Mappila Biryani
- Nendran banana fritters
Kerala itself has huge diversity in its cuisine which can be attributed to the Dutch, the Arab and the locals influences. Broadly, the state has the Mappila’s – Kerala Muslim Community (influenced by the Arab’s), the Syrian Christian community (influenced by the Dutch) and the Nadan food which is local kerala food.
The Mappila cuisine, predominantly found in the North of Kerala (Malabar region), was influenced by the food habits of Arab traders who came to the Malabar region and married locals of the region. It is a fascinating blend of traditional Kerala and Arab food culture. What is unique is the use of local produce to make the dishes influenced by the traders. For example, unlike the rest of kerala, this cuisine uses ghee in their dishes, probably another Arab influence in the region.
Biryani is known for its origins in the Arab and Persian cuisines. The biryani made in the Mappila community uses local Jeerakasala/kaima rice instead of basmati rice. It is lightly spiced with local ingredients but is very flavourful and cooked just like dum biryani.
Nendran banana fritters
With banana trees in every backyard, the fruits are widely used for making sweets as well as savoury snacks. Unnakaya is a sweet that is widely eaten in the community. It is essentially, deep fried Nendran banana (local variety) stuffed with coconut, sugar and dry fruits. Due to the limitations of home-delivery, we are serving banana fritters with a coconut creme anglaise that gives a similar mouthfeel.
